Champagne Gaspard Brochet - Le Renard - Volume 3
Based in Villers-aux-Nœuds, Gaspard Brochet is part of a generation of winemakers who reinterpret the terroirs of the Montagne de Reims through highly precise single-vineyard cuvées. His "Volume" collection is based on an artisanal approach where each wine tells the story of a place, a grape variety, and a vintage. Through these micro-cuvées produced in limited quantities, the winemaker seeks to reveal the finest nuances of each plot by minimizing technical interventions. Le Renard – Volume 3 perfectly illustrates this philosophy by highlighting an old Pinot Noir vine located on the Premier Cru terroir of Écueil. This cuvée is also distinguished by an original aging process that includes a phase under veil, adding an extra dimension to the expression of the terroir. The 2023 vintage finds here a unique interpretation, both deep, complex, and resolutely distinctive.
Le Renard is made exclusively from Pinot Noir from the "Les Croix" plot, planted in 1959 on the Premier Cru terroir of Écueil. These old vines draw their energy from a compact brown sandy soil, a configuration that favors aromatic finesse while maintaining a beautiful natural concentration. As with the other cuvées of the estate, vinification is carried out entirely by gravity to preserve the integrity of the grapes and the delicacy of the juices. Fermentations and aging take place in small oak barrels, following an artisanal approach where the wine is neither fined, racked, filtered, nor topped up. The particularity of this cuvée lies in a partial aging under veil, a rare practice in Champagne that brings greater depth and aromatic complexity. This method enriches the wine without masking the identity of the Pinot Noir or that of the Écueil terroir. The result is a characterful champagne, deeply marked by its origin and its aging method.
On tasting, this cuvée reveals a particularly complex and captivating profile. The nose combines notes of ripe red fruits, black cherry, and plum with more evolved nuances evoking sweet spices, dried fruits, fresh walnut, and a subtle saline touch brought by the aging under veil. The palate is ample, dense, and textured, with a generous body supported by remarkable tension. The old vines bring depth and persistence while the sandy terroir contributes to the finesse of the whole. The discreet bubble accompanies a long finish, slightly iodized and very expressive. This gastronomic champagne will perfectly accompany characterful poultry, mushroom dishes, sweetbreads, or preparations with slightly smoky accents.
