Champagne Nowack - S.A - Extra Brut
The Nowack Champagnes tell a family story that began in 1795 in Vandières, in the heart of the Marne Valley. Today, Flavien Nowack works alongside his father on the 3.6 hectares of the estate, with a demanding and contemporary parcel-based approach. Mostly planted with Meunier, complemented by Chardonnay and Pinot Noir, the vineyard rests on sandy limestone soils on marl, bringing tension and minerality. Since his return in 2011, Flavien has refined the reading of the terroirs by isolating parcels and vintages, revealing cuvées that have become essential in the most discerning cellars. His philosophy is based on thoughtful viticulture and precise work in the vineyard to express the identity of each place.
The cuvée S.A Extra Brut is a blend of 60% Meunier and 40% Chardonnay, made without a vintage from grapes grown on the estate's sandy limestone soils. Vinification is done with indigenous yeasts, without chaptalization, and aging is carried out in thermoregulated stainless steel tanks, without malolactic fermentation, to preserve the natural freshness of the fruit. True to his style, Flavien favors a gentle and low-intervention vinification, seeking purity and tension. The Extra Brut dosage highlights the precision of the wine and showcases the mineral framework of the terroir. This cuvée embodies the elegance and rigor that characterize the house.
On tasting, the wine offers an expressive nose of white fruits and citrus, with a delicate floral touch. The bubbles are fine and persistent, bringing relief and energy. The palate is straight, fresh, and structured, supported by a chiseled acidity and beautiful aromatic purity. The finish is clean, mineral, and elegant, a signature of the Nowack style. This Champagne will ideally accompany a refined aperitif, seafood, or delicate cuisine.
