Founded in Brora, on the Sutherland coast, Clynelish embodies a maritime and elegant style. The distillery produces a single malt renowned for its waxy texture, subtle salinity, and a citrusy tension that characterizes the northern Highlands. This 14-year-old version blends primarily oak barrels that previously held bourbon, with a portion of refill barrels to maintain balance. Slow distillation in slender-necked stills to promote aromatic purity. Long maturation by the sea polishes the edges and concentrates the structure. 46 percent ABV to bring out the aromatic expression without harshness. The house's signature edition.
The nose opens with lemon zest, yellow apple, and beeswax, then reveals ripe pear, light honey, and a hint of salt. Notes of white flowers, golden malt, and a hint of distant smoke complete the bouquet. The palate is full-bodied and precise. It starts with citrus and wax, followed by a rich mid-palate with barley, subtle vanilla, and a touch of white pepper. The texture is oily and silky, carried by a marine minerality. The finish is long and clean, with lingering notes of orange peel, fine salt, and light wax, followed by a spicy finish that prolongs the freshness.
At the table, it pairs well with smoked salmon, seared scallops, mature cheddar, 24-month Comté cheese, or roasted poultry with lemon and thyme. It also pairs well with dark chocolate with fleur de sel. Serve in a tulip glass between 16 and 18°C. Add a few drops of water if you want to open up the waxy, lemony notes.
