Domaine Caroline Morey is located in Chassagne-Montrachet, in the heart of the Côte de Beaune in Burgundy, one of the most prestigious regions for great white wines made from Chardonnay. Caroline Morey comes from a recognized winemaking lineage and founded her own estate in 2014 after taking over about seven hectares of vines partly from the family heritage. The vineyard is mainly spread between Chassagne-Montrachet, Santenay, and Beaune, on clay-limestone soils typical of this southern part of the Côte de Beaune. The vineyard work is based on viticulture attentive to soil respect and the natural balance of the plots, with a low-intervention winemaking approach aimed at preserving the purity of the fruit and the identity of each climate. The white wines are fermented in large oak containers, often demi-muids of about 350 liters, with a limited proportion of new wood to accompany the expression of Chardonnay without dominating it.
The Chambrées Blanc 2023 cuvée is among the most confidential productions of the estate, coming from a micro-plot located on the slopes of Chassagne-Montrachet. This Côte de Beaune terroir, characterized by clay-limestone soils and a temperate continental-influenced climate, is particularly favorable to the expression of Chardonnay and gives rise to structured and mineral wines. Produced in very small quantities, this rare cuvée illustrates Caroline Morey's precise work to reveal the uniqueness of each terroir.
The Chassagne-Montrachet Chambrées Blanc 2023 is made exclusively from Chardonnay from this carefully cultivated small plot. The grapes are hand-harvested to preserve the integrity of the clusters and allow rigorous selection in the vineyard. After gentle pressing, fermentation takes place naturally in large oak barrels to promote a slow and precise evolution of the wine. Aging continues for several months on fine lees, which adds depth and texture while maintaining the natural tension of Chardonnay. The proportion of new wood remains deliberately moderate so as not to mask the expression of the terroir and to preserve the aromatic finesse of the wine. This approach gives rise to a particularly precise Chassagne-Montrachet, marked by the balance between richness and freshness. The confidential production of this cuvée enhances its sought-after character by lovers of great white Burgundies.
On the palate, Chambrées Blanc 2023 reveals an elegant nose where aromas of white flowers, ripe pear, and peach mingle, accompanied by citrus notes and a subtle hint of hazelnut. The mouth is distinguished by a broad and silky texture, supported by precise acidity that brings tension and dynamism. Orchard fruit and ripe lemon flavors combine with a mineral framework reminiscent of stone and chalk, a signature of the limestone terroirs of Chassagne-Montrachet.
