Founded by Romain and Damien Bouchard, Domaine de l'Enclos embodies a new generation of Chablis winemakers committed to demanding organic viticulture. The plots, located on the Kimmeridgian slopes around Chablis and Beine, are cultivated with meticulous attention to detail, prioritizing optimal ripeness, healthy soils, and purity of expression. The estate's style aims for precise, saline, and luminous Chardonnays, true to the limestone energy of the Serein valley.
Chablis 2023 is a blend from several vineyard sites, designed to capture the essence of the vintage. The grapes are gently pressed and then fermented at low temperatures to preserve their aromatic vibrancy. Aging takes place primarily in tanks on fine lees, with judicious intervention to refine the texture without overpowering the wine. Bottling respects the wine's integrity and prioritizes a clear expression of the terroir.
The nose opens with aromas of white flowers, ripe lemon, and crisp pear, joined with aeration by a hint of fresh almond and a sensation of damp stone. The palate is precise and juicy. The attack is crisp, followed by a heart of citrus and white fruit carried by a chalky structure characteristic of Kimmeridgian marls. The finish is long, dry, and mouthwatering, with a subtle hint of iodine and a lemony zest that prolongs the freshness.
At the table, this 2023 Chablis pairs well with oysters, clams, and a citrus-infused sea bass ceviche. It complements sole meunière, pike-perch with beurre blanc sauce, roast chicken with lemon, and asparagus risotto. Hard cheeses, such as a mature Comté, highlight its tension without masking its balance.
