Mâcon Azé 2024 comes from clay-limestone hillsides facing east and southeast. A generous and balanced vintage. Gentle pressing of whole bunches, gravity settling, then fermentation in stainless steel vats at low temperatures to preserve the crispness. Aged on fine lees for six to eight months with measured stirring to bring silkiness without losing momentum. Bottling in spring to preserve varietal brilliance. Dry wine.
The nose opens with ripe lemon, fresh pear, and white peach, enhanced by hawthorn blossoms and a hint of almond. The palate is slender and precise. Lively attack, savory heart of zesty citrus and crisp apple, texture delicately enveloped by aging on lees. The saline framework stretches the mid-palate. The finish is long, clean, slightly chalky, with a fine bark bitterness that is characteristic of the Azé terroir.
At the table, serve this Mâcon Azé with oysters, sea bass ceviche, sushi, pikeperch with beurre blanc, roasted poultry with lemon, or goat cheese. Ideal temperature between 10 and 12 degrees in a tulip glass. Open fifteen to twenty minutes before serving.
