Domaine Perrault Jadaud - Les Hauts Bois Vouvray 2022
Domaine Perrault-Jadaud is located in Chançay, in the heart of the Vouvray appellation in Touraine, in the Loire Valley. The estate was born in 2009 from the meeting of Tanguy Perrault and Anne-Cécile Jadaud, both coming from the world of viticulture and oenology. Over the years, the couple has built a vineyard of about eight hectares spread around Vouvray, Noizay, and Vernou-sur-Brenne, areas known for their limestone and siliceous soils favorable to Chenin Blanc. The vines are cultivated with an attentive approach to respecting life, in a logic close to organic farming and with significant soil work. This Loire terroir, marked by the presence of tuffeau and flint clays, favors wines that are both structured and very expressive on freshness. Chenin Blanc is the largely dominant grape variety here, sought after for its ability to translate the nuances of the terroir and to produce wines with strong personality. In this artisanal approach, the Les Hauts Bois 2022 cuvée fits within the estate's desire to offer precise and readable dry Vouvrays in their origin.
The Les Hauts Bois 2022 cuvée is made exclusively from Chenin Blanc coming from plots located on the slopes of Vouvray. The vines, some of which are several decades old, root in soils composed of flint clays and limestone formations from the typical tuffeau of the region. This type of terroir allows a gradual ripening of the grapes while maintaining a naturally high acidity, an essential element for the balance of great Loire Chenins. The harvest is generally done manually to preserve the integrity of the bunches and the aromatic precision. The vinification relies on fermentations carried out with indigenous yeasts to respect the identity of the fruit and the terroir. The aging mainly takes place in tanks, which allows preserving the purity of the grape variety and the natural tension of the wine. The whole gives birth to a dry Vouvray that favors freshness and the direct expression of Chenin.
On the palate, Les Hauts Bois 2022 presents a delicate nose where aromas of fresh apple, pear, and white flowers mingle, accompanied by citrus nuances and sometimes a slight honeyed touch. The mouth is distinguished by a dynamic texture and a clear acidity that highlights the Loire origin of the wine. The flavors evoke ripe lemon, quince, and orchard fruits, supported by a mineral frame reminiscent of chalk and wet stone. The balance rests on the combination between the ripeness of the fruit and a salivating tension that prolongs the tasting. The finish, precise and slightly saline, brings freshness and reinforces the impression of purity. This dry Vouvray pairs particularly well with grilled fish, shellfish, creamy poultry dishes, or goat cheeses from the region. In its youth, it seduces with its crunchy and accessible character while retaining an interesting aging potential over a few years.
