The François Mikulski estate is one of the most respected names in Meursault, in the Côte de Beaune, where it has established itself with precise, pure, and elegant wines. While the estate is mainly sought after for its great Meursault Chardonnays, it also produces a Crémant de Bourgogne faithful to its spirit of finesse. This sparkling cuvée offers a more immediate approach to the Mikulski universe, while maintaining the tension and clarity that characterize the house. Made by Maison Picamelot in Rully, a recognized specialist in Burgundian sparkling wines, this crémant benefits from precise expertise in the secondary fermentation. The blend is mainly based on Pinot Noir and Chardonnay, complemented according to vintages by small proportions of Aligoté and Gamay. The cultivation is indicated as organic but not certified, continuing the estate's attentive approach. François Mikulski Crémant de Bourgogne thus presents itself as a refined, fresh Burgundian bubble, perfectly suited for both aperitif and table.
The cuvée is made under the Crémant de Bourgogne appellation, following the traditional method, with a second fermentation in the bottle. Pinot Noir brings structure, volume, and a slight fruity depth, while Chardonnay provides freshness, finesse, and a tighter framework. Aligoté, when included in the blend, enhances the energy, liveliness, and thirst-quenching character of the cuvée. Gamay, mentioned by the estate as possible depending on the vintages, can add a fruitier and softer touch to the final balance. Some sources indicate aging on lees for about 18 months, which helps refine the bubbles and develop delicate notes of brioche, white fruits, and citrus. The overall style remains dry, fresh, and precise, far from overly dosed or simply aromatic sparkling wines. This Crémant de Bourgogne thus expresses a beautiful alliance between indulgence, tension, and Burgundian elegance.
On tasting, François Mikulski Crémant de Bourgogne offers a clear and bright robe, animated by fine and regular bubbles. The nose may evoke yellow apple, fresh pear, lemon, white flowers, hazelnut, light brioche, and a mineral touch. On the palate, the attack is lively, clean, and refreshing, with delicate mousse and a beautiful sense of balance. Chardonnay brings precision and momentum, while Pinot Noir adds more body and structure. The finish remains fresh, slightly saline, with a hint of almond and white fruits that pleasantly prolong the tasting. This crémant will ideally accompany an aperitif, gougères, oysters, smoked fish, shellfish, cold poultry, parsley ham, or fresh goat cheese. It should be served around 8 to 10 °C, in its youth, to fully enjoy its bubble finesse and aromatic brightness.
