Cherry Almond Espelette Pepper belongs to the Les Vieillis range. The recipe is based on a blend of previously aged rums, then a maceration of fleshy cherries and whole almonds to capture the fruity core and praline dimension. The Espelette pepper is infused sparingly to bring relief and aromatic warmth without dominating. Separate macerations, blending in stages, sugar adjusted to a minimum to preserve balance. Blended at 32 percent to bring out the fruit expression and spicy sweetness. 70 cl format.
The nose opens with black cherry and morello cherry, enhanced by a framework of fresh almond and marzipan, with a discreet hint of vanilla and orange peel. The palate is round and clean, first with juicy cherry then with notes of roasted almond and kernel. The Espelette pepper brings a spicy caress that rises gently, prolonging the indulgence without burning. The finish is long, clean, slightly cocoa-like, with a return of candied cherry and a controlled spicy heat.
At the table or at the bar, serve very cold over ice, as an old-fashioned with a dash of bitters, as a highball with dry sparkling water, or as a citrus sour. It pairs well with chocolate fondant, a red fruit almond tart, or a mature hard cheese. Serving temperature 6 to 8°C. Keep refrigerated after opening and consume within three to four months to preserve the fruit's brightness.
