Opthimus - Cum Laude - Solera 15 years - 41.3%
Based in the Dominican Republic, Oliver y Oliver specializes in Hispanic-style rums with a silky texture and precise oakiness. The Opthimus range embodies the core of their expertise, with blends patiently polished to deliver elegant, accessible, and gourmet profiles.
Cum Laude is a selection that showcases Opthimus' signature balance. It's based on column-distilled molasses rums, aged using the solera method to achieve an average age of fifteen years. Matured primarily in former bourbon barrels to bring out vanilla, light caramel, and a finely toasted oak. Brewed at 41.3 percent to preserve roundness while gaining aromatic precision.
The nose opens with vanilla, toffee, and brown sugar, followed by candied orange, ripe banana, subtle coconut, and a hint of cocoa. The palate is soft and full, with a silky texture, noble molasses, crème brûlée, and dried fruits. Sweet spices gradually rise, cinnamon and nutmeg, with a polished oak that remains supportive. The finish is clean and long, blending salted caramel, orange peel, and milk chocolate, with a controlled warmth.
At a table or bar, serve neat at 16 to 18°C in a tulip glass, or over a large ice cube to tighten the structure. Excellent base for a rum Old Fashioned with a dash of cocoa bitters, El Presidente, or a lime tonic Highball. Pairs well with chocolate fondant, banana caramel tart, roasted pineapple, or mature hard cheese. Store upright, away from light. After opening, seal tightly and consume within one year to preserve the expression of the fruit and oak.
