Domaine Bornard is one of the most famous in the Jura . Originally from the village of Pupillin, Philippe Bornard had always worked the vines but sold his grapes to the village cooperative cellar before taking the plunge, in 2005, to produce his own wines. Since December 4, 2017, Philippe Bornard has been retired and it is his son Tony Bornard who is now in charge after having bought the family estate and merged with his own vineyard. Today, the total area is 11.2 hectares. He pursues the conduct of the vineyard in certified organic farming with biodynamic practices, and the minimum of intervention to obtain "natural" wines often without sulphur, while giving rise to experiments which sometimes move away from traditional codes.
Le Rouge Queue is made from Melon à Queue Rouge (Melon d'Arbois). The vine over 40 years old was propagated by mass selection and cultivated on a terroir of iridescent green and pink Triassic marls at a place called La Rouge. The harvest is put in direct pressing, the beginning of the fermentation occurs in stainless steel tanks then the must is sung in barrels for the rest of the fermentation. The wine is aged with topping up, without stirring. Aging lasts a minimum of 4 and a half years. The wine was bottled on July 27, 2017 without filtration with less than 20 mg/L of sulphur. It has an aging potential of around thirty years. This long-keeping wine gives an impression of sweetness since a quarter of the surface includes a variety of muscat melon which leaves this sweetness in the mouth.
