Domaine Jéméry Recchione - Hautes Côtes de Nuits - Red 2023
Domaine Jérémy Recchione is a micro-wine estate located in Burgundy . After starting out alongside Pierre Naigeon in Gevrey-Chambertin in 2010, Jérémy Recchione launched his business in 2013 by purchasing grapes from winegrower friends while continuing his apprenticeship. In 2019, he acquired his first plot of Aligoté in the Hautes Côtes de Nuits, marking the beginning of his own estate. In addition to the classic Burgundy grape varieties, Jérémy Recchione is broadening his horizons by experimenting with other varieties and terroirs, including cuvées in Italy. His philosophy is based on a deep respect for nature and a minimalist approach in the cellar. The work in the vineyard is carried out in the healthiest way possible, with manual harvesting carried out in small 5 kg crates to preserve the integrity of the grapes. Fermentations are carried out using only natural yeasts, while the use of sulfur is either non-existent or reduced to the strict minimum.
Hautes-Côtes de Nuits is made from Pinot Noir grown on clay-limestone and white marl soils. Vinification is carried out with 80% whole bunches and the grapes are put into cold pre-fermentation maceration for 3 days. Maceration lasts 15 days in stainless steel vats. The wine is aged for 11 to 12 months in 228-litre barrels .
