Champagne Oudiette - Les Hautes Sources Souris 2021
The Oudiette estate is located in Beaunay, in the Marne Valley in Champagne . Founded nearly 100 years ago, it is now run by Maxime, Pascal and Sylvie Oudiette . The estate covers approximately 4 hectares , spread between Beaunay and Celles-lès-Condé, and the average age of the vineyard is 39 years. Within the estate, the Napoleonic land register of 1821 is used to identify and name the plots. More precise and less simplified than the current administrative land register, it allows for a better understanding of local ecosystems and microclimates.
Les Hautes Sources Souris is made from Pinot Noir from the eponymous plot planted in 1990. The soils of the Les Hautes Sources Souris plot are worked under the vines only, the remainder being protected by a cover mainly composed of white clover planted 10 years ago, but naturally replaced year after year by more native plants. This Blanc de Noirs comes mainly from the 2021 harvest (81%), supplemented by perpetual reserve wines from the 2018, 2019 and 2020 vintages (19%). The wine is aged for 11 months in 228-liter barrels then 30 months on slats . It was disgorged in October 2024 and bottled with an Extra-Brut dosage of 1.5 g/L .
