BAIE DES TRESORS - Fruits des Pluies 2021 - 50%
Baie des Trésors is a young Martinican house that has chosen to explore the island through the lens of micro-terroirs, offering a range of single-plot agricultural rums from the Galion agricultural estate. Fruits des Pluies 2021 is born from the inner slopes near the Habitation Dufferet, from the higher and wetter slopes where the canes soak up water and juice, like a lush grass nourished by tropical showers. This choice of a wet plot naturally produces round, generous rums full of softness, in a very different register from the drier and windier terroirs of the coast. The brand claims an approach without added sugar or caramel, focused on the purity of the cane juice and the precision of the aging. Fruits des Pluies 2021 thus stands as the most caressing expression of the Martinican bay, a characterful rum already cult among single-plot enthusiasts.
Baie des Trésors Fruits des Pluies 2021 50% is an AOC Martinique agricultural rum, pure cane juice, aged in wood from a single harvest coming from the Dufferet plot. Distilled in a Creole column still, it undergoes aging of about a dozen months in French oak barrels, complemented by new and ex-bourbon barrels, which gives it its bright golden color and its status as a young amber. This lightly marked wood aging aims to blend the primary cane aromas and provide length without masking the juicy character of the wet plots. Bottled at 50%, Fruits des Pluies 2021 is presented without any addition or artifice, for a direct expression of the terroir and the vintage. It is a rum designed as much for pure tasting as for high-end mixology centered on characterful agricultural rum.
On the palate, Baie des Trésors Fruits des Pluies 2021 reveals a deep gold color with amber reflections. The nose is ample and generous, carried by notes of candied fruits, dried fruits, and vanilla, mingled with touches of blond tobacco, dried flowers, and a hint of soft wood. On the palate, the attack is round and warm, the texture rich but controlled, with an aromatic core dominated by ripe fruits, sweet cane, and citrus accents that bring freshness and dynamism. The power of the 50% is perfectly integrated, structured by a spicy framework and a gentle bitterness that lengthen the finish. The finish extends on notes of vanilla, candied fruits, blond tobacco, and a slight saline impression, a signature of the best terroir agricultural rums. Served neat, slightly chilled, Fruits des Pluies 2021 ideally accompanies an exotic fruit dessert, roasted pineapple, a banana tart, but also pairs very well with mild Creole cuisine and lightly aged pressed cheeses.
