Néret Vély Champagne - Cabotine Extra Brut
Located in Festigny, in the heart of the Marne Valley, the Néret Vély family estate has been cultivating and growing grapes since 1945, working among clay-limestone plots and practicing vineyard management that respects the soil. On 5.5 hectares, the family crafts precise champagnes where the fruit takes center stage, with a strong connection to the land and artisanal expertise passed down through generations.
Cabotine Extra Brut is a non-vintage cuvée made primarily from Chardonnay and Pinot Meunier grapes grown on the slopes of Festigny. Vinification takes place in stainless steel tanks with malolactic fermentation to preserve the fruit's vibrancy, followed by extended aging on the lees to refine the bubbles before disgorgement. The dosage is carefully controlled at around five grams per liter, a hallmark of Extra Brut that enhances the mouthwatering expression of the terroir.
The nose opens with a crisp freshness of white fruits and citrus, including crunchy pear, ripe lemon, and mandarin, underscored by a touch of almond and a delicate hint of pastry. The palate, focused and juicy, unfolds with a fine effervescence that carries a lemony core and a precise chalky structure. The Meunier contributes a supple richness, while the Chardonnay provides tension and length. The finish is dry and bright, marked by a tonic salinity and a hint of zest that invites the next sip.
At the table, Cabotine Extra Brut pairs well with oysters and shellfish, citrus-infused sea bass ceviche, sole meunière, or marinated salmon. Its straightforward character complements roasted poultry with lemon, sea bream tartare, asparagus risotto, and hard cheeses such as aged Comté, whose sweetness balances its acidity.
