In Saint-Émilion, Château Moulin Saint-Georges occupies about seven hectares on a clay-limestone hillside facing Château Ausone. The property belongs to the Vauthier family and benefits from the same exacting approach to vineyard management and winemaking. Merlot largely dominates the grape blend, finding in these limestone soils a favorable combination of ripeness, depth, and freshness preservation. Cabernet Franc complements this expression with its floral, spicy, and more vertical character. The harvest is done manually and preceded by significant vineyard work aimed at controlling yields and homogenizing grape ripeness. The 2000 vintage is a particularly successful year in Saint-Émilion, with conditions allowing both fruit richness and tannic maturity. After more than twenty-five years of evolution, this Moulin Saint-Georges now enters a phase where its initial generosity is enriched with more complex tertiary nuances.
Château Moulin Saint-Georges 2000 is composed of 80% Merlot and 20% Cabernet Franc. Fermentation is conducted in stainless steel tanks before aging for about fifteen to eighteen months in barrels, with a significant proportion of new wood at that time. This structure supports a generous and concentrated material without erasing the natural fruit richness. Merlot brings a broad texture, ripe black fruits, and a enveloping sensation, while Cabernet Franc maintains more freshness in the wine's architecture. In its youth, the 2000 stood out for significant concentration and abundant but ripe tannins. Bottle aging has gradually softened this structure, allowing more room for aromatic complexity and finesse on the palate. The wine still retains enough depth to continue evolving when storage conditions have been impeccable.
Today, the color shows a deep garnet, evolving towards ruby and slightly tawny hues on the rim. The bouquet combines blackberry, blackcurrant, and black plum with notes of tobacco, cedar, and undergrowth. With aeration, fine leather, truffle, licorice, and sweet spices may appear, reflecting the now advanced evolution of the vintage. The palate remains broad and velvety, with progressively softened tannins that still support a deep material. The evolved black fruits mingle with cocoa, dry leaves, and a mineral dimension that preserves freshness. The finish extends on tobacco, spices, plum, and a touch of graphite, in a register now more complex than demonstrative. Château Moulin Saint-Georges 2000 will benefit from careful decanting and will accompany roasted pigeon, beef fillet with porcini mushrooms, rack of lamb, royal hare, or cuisine featuring black truffle.
