Domaine Fumey Chatelain - Savagnin Ouillé 2024
In Montigny-lès-Arsures, north of the Arbois vineyard, Domaine Fumey Chatelain was built around a family history that began in the 1980s with Raphaël Fumey and Adeline Chatelain. After the devastating frost of 1991, which destroyed most of their harvest, the couple chose to vinify the few preserved grapes rather than sell them, giving a new direction to the estate. Their son Marin joined the domaine in 2015 and gradually brought a more precise, free, and contemporary interpretation of the Jura terroirs. The plots rest on a variety of marls and limestones particularly favorable to the region's historic grape varieties. The Savagnin finds ideal conditions here to develop its natural tension, depth, and saline character. The family favors low-intervention vinifications based on indigenous yeasts and aging adapted to the personality of each wine. This ouillé version offers a non-oxidative approach to the grape variety, focused on the brightness of the fruit and the clarity of the terroir.
The Savagnin Ouillé 2024 is made exclusively from Savagnin grown on marl soils in the Arbois area. The grapes are hand-harvested, then slowly pressed whole cluster to extract fine juices without harshness. Fermentation starts spontaneously under the action of naturally present yeasts on the grapes and in the cellar. The wine then continues its aging on fine lees in used barrels and larger capacity containers. The barrels are regularly topped up to compensate for evaporation and prevent the formation of the yeast veil characteristic of oxidative Jura expressions. This topping up preserves aromas of citrus, fresh fruit, and flowers while allowing the Savagnin to gain volume. The 2024 vintage thus combines a structuring acidity with precise ripeness, in a straight, energetic style free from marked oxidative notes.
The pale yellow robe is tinged with golden and silvery reflections. The nose opens with ripe lemon, fresh apple, and pear, then evolves towards acacia flowers, ginger, and dried herbs. Upon aeration, notes of wet stone, almond, and yellow fruits appear, accompanied by a discreet smoky touch. The palate has a lively and vertical attack, quickly balanced by ample and slightly creamy texture. The natural acidity of the Savagnin stretches the citrus flavors and brings a particularly salivating sensation. Fine bitterness, a spicy nuance, and persistent salinity give relief to the finish. This white will accompany almond trout, smoked fish, crustaceans, creamy poultry, mushrooms, or aged Comté cheese.
