Domaine Grand Château-Chalon Yellow Wine 2017 is made exclusively from Savagnin, an inseparable grape variety of the great Jura yellow wines. The grapes come from vines about 45 years old, rooted at 360 meters altitude in limestone soils resting on gray marls. This terroir gives the wine its tension, depth, and this dry minerality that naturally structures the great Château-Chalon wines. After a late September harvest, the grapes are slowly pressed for several hours, then fermented in stainless steel tanks with a starter culture. The wine rests first for one year in tank before continuing its aging under veil for six years in 228-liter oak barrels aged 25 years, without topping up. This long maturation, marked by significant evaporation, concentrates the matter and develops characteristic aromas of walnut, spices, and dried fruits. Bottled without fining and only lightly filtered, this 2017 Yellow Wine retains a pure, powerful intensity faithful to its appellation.
