Managed under certified organic farming FR-BIO-01, the vineyard undergoes rigorous soil work through tractor inter-row cultivation and crawler tractor, promoting vitality and deep rooting. The plots are hand-harvested, with extreme attention paid to the maturity and integrity of the grapes. The estate favors low-intervention vinifications to reveal the purity of the terroir. The Chassagne-Montrachet 1er Cru En Cailleret 2024 comes from a 0.65 hectare plot, located on a southeast-facing slope, benefiting from ideal sunshine. The soils mix clays, marls, and a notable proportion of limestone, providing tension and depth. The vines, planted in 1985 and 1990, are trained in simple Guyot, ensuring balance and regularity. Made exclusively from Chardonnay, the wine benefits from 14 to 16 months aging in 228 and 350-liter oak barrels, including 30 to 50% new wood, bringing structure and complexity. It is fined with bentonite, unfiltered, then bottled with a natural cork quality Fleur ND Tech, sealed with wax, in a pursuit of excellence and longevity.
