After a mechanical harvest sorted on the table, the vinification is parceled and takes place in thermoregulated concrete vats. The 12 months of aging then take place in oak barrels, renewed by thirds each year.
Thus is born a wine with a complex and elegant nose, a well-structured mouth, with fleshy tannins and a persistent finish . Good vintages can be kept for more than 10 years. We especially remember the 2010, the first wine produced by the new director, Paz Espejo. A wine above its vintage, which bodes well for the future.
