Château DE PRESSAC 2017
Château de Pressac is located in the village of Saint-Etienne-de-Lisse, in the appellation of Saint-Emilion in Bordeaux.The 42-hectares property, of which 36 hectares are planted with vines, has belonged to Jean-François and Dominique Quenin since 1997 and has been classified Grand Cru Classé of Saint-Emilion since 2012. Dedicated to the sustainable preservation of nature, the Château de Pressac is a leading field in environmental protection. It has adopted the Environmental Management System since its creation and has obtained Level 3 High Environmental Value certification.
Château de Pressac 2017 is a blend of Merlot (74.5%), Cabernet Franc (16%), Cabernet Sauvignon (7%), Carmenère (1.5%) and Noir de Pressac/Malbec (1%). Manual harvesting is followed by total destemming of the grapes and careful sorting with a vibrating table and optical sorting machine. The winery was completely remodeled in 1999, and now operates by gravity with concrete tanks and thermoregulation of the tanks. Maceration lasts 3 to 4 weeks in concrete vats, then each plot is fermented separately. A pre-fermentation maceration is carried out as well as punching down and pumping over. The malolactic fermentation takes place partly in new barrels. The wine is aged for 20 months, including 18 months in barrels. The 2017 vintage was hit by a terrible episode of frost which destroyed a large part of the Saint-Émilion harvest, but Château de Pressac was spared due to its high altitude. In the vineyards that did not freeze, flowering took place earlier than usual, as did veraison.
