Mas de Libian - Cave Vinum 2019
Mas de Libian is located in Saint-Marcel-d'Ardèche on the right bank of the Rhône, in Ardèche. It has belonged to the Thibon family since 1670, a family estate passed down from generation to generation. The 25-hectare vineyard has always been cultivated organically, and the vineyard is certified biodynamic. The property also consists of 8 hectares of olive trees, cereals, hay, garden, bees ... Since September 2016, Aurélien, the son of one of the current owners, has also settled in Libian.
Cave Vinum means « Beware of the wine » in Latin. It is a blend of Viognier (40%), Roussanne (40%) and Clairette (20%). The harvest is carried out entirely by hand with a very careful sorting of grapes in the vineyards. On arrival at the winery, the grapes are pneumatically pressed. Cold-settling follows for 12 hours, the the wine is racked and the fine lees are reintegrated. The Clairette is vinified and aged in Stockinger demi-muids. The wine is blended in March following the harvest.
