Le Rocher des Violettes - Cot Vielles Vignes 2019
Le Rocher des Violettes is located in betwwen Montlouis and Touraine, in the Loire Valley. The estate is managed by Xavier and Clémence Weisskopf. Originally from Picardy, Xavier discovered his passion for the vine during his studies in Auxerre. He undertook a Viticulture and Oenology degree in Beaune, completed his internships with Claude Maréchal and trained with Louis Barruol for 4 years at Château Saint Cosme in Gigondas. At the age of 25, he created his estate on the lands of St Martin le Beau. In 2005, he took over 7 hectares of old vines from Chenin in Montlouis sur Loire and old Côt in Touraine. Since 2010, his wife Clémence has been accompanying and supporting him in the administrative and commercial tasks. Le Rocher des Violettes is certified in organic farming since 2012.
Côt (or Malbec) is made from grapes cultivated on 5 plots: Chesnay, Bel-Air, La Rochère, Le Grand Poirier and Les Borderies. The age of the vines varie between 5 to 129 years. Two-third of the harvest is fermented in whole bunches, with the rest destemmed. The maceration lasts 3 weeks. The wine is aged for 12 months in casks and 500-litres barrels.
