Julien Altaber - SEXTANT - Burgundy White 2020
Julien Altaber , born in Auvergne, grew up in the Mâconnais in the south of Burgundy . He naturally turned to viticulture at the age of 16 and continued his training in a large trading house in Beaune. In 2002, he carried out the harvest alongside Dominique Derain in Saint-Aubin, who finally pushed him in 2007 to buy his first Pinot Noir grapes. Without any equipment, he uses Dominique's infrastructure to make his first cuvée. In 2015, and after a phase of equipment and acquisition, he owns half a hectare of vines. All the grapes come from vines grown without weed killers or synthetic products. All wines are vinified and aged without sulphites with very little intervention.
The Bourgogne Blanc comes from a parcel of Chardonnay aged around twenty years located in the commune of Montbellet. The grapes are crushed and then directly pressed. The grape juice stays in vats between 24 and 36 hours, then it is poured into 228-litre barrels . After fermentation, the wines remain on the lees for the duration of the ageing.
