Domaine GANEVAT - Les Survivants - Magnum 2021
The 2021 Les Survivants cuvée from Domaine Ganevat, offered here in Magnum format, was born from a vintage marked by frost, which deeply impacted the Jura vineyard. Faced with this major climatic constraint, Jean-François Ganevat chose a blend of chardonnays from the different plots of the estate, spread across all the terroirs of the Côtes du Jura. This cuvée embodies a humble and sincere response to adversity, where the identity of the vintage takes precedence over the search for parcel segmentation. The Magnum format further enhances the aging potential and the slow evolution of the wine. The nose reveals a fine and complex aromatic profile, blending notes of white fruits, fresh apple, and citrus zest. Upon aeration, chalky, slightly milky and saline nuances appear, signatures of the long aging on lees. On the palate, the attack is broad and precise, supported by a deep and textured matter. The natural freshness of the chardonnay perfectly balances the richness acquired over time. The mineral framework structures the whole and brings great length. The balance between tension, volume, and finesse is remarkable. The finish is long, clean, and persistent, with an elegant salinity.
Vinified with indigenous yeasts, Les Survivants 2021 benefited from a four-year aging on lees in demi-muids, without intervention, fining, filtration, or any addition of sulfur. This long-time work confers to the wine a natural stability, great aromatic depth, and a broad texture, reinforced by the Magnum format.
