Vinified with indigenous yeasts, this cuvée was made without any intervention, without filtration, and without added sulfur. The cold semi-carbonic maceration of whole clusters is followed by one year of aging in a wooden truncated cone vat, allowing the wine to structure itself while retaining its original energy.
