Domaine des Cavarodes - Pressed Savagnin 2023
Domaine des Cavarodes is one of the key players in the new Jura dynamic, located in Cramans in the heart of the Côtes du Jura and led by Emmanuelle and Jean-Michel Petit. The estate relies on demanding organic viticulture, attentive to natural balances and the most accurate expression of the terroirs. The Pressed Savagnin cuvée comes from selected plots resting on marl soils typical of Jura, favorable to tension and aromatic depth. Unlike Savagnins aged under a veil, this cuvée is vinified with full topping up, in a quest for purity and precision. It thus offers a straightforward and contemporary reading of this emblematic grape variety. Pressed Savagnin fully embodies the estate's philosophy, between respect for traditions and modern interpretation.
The 2023 Pressed Savagnin reveals a fine and expressive aromatic profile, marked by notes of ripe citrus, fresh pear, and white flowers, accompanied by a subtle mineral touch. The palate is taut and structured, driven by a lively acidity that stretches the wine with elegance. The texture is straight, almost chalky, gradually revealing a beautiful depth. The absence of oxidative character highlights the natural freshness of the grape variety and the precise reading of the terroir. The controlled and discreet aging supports the body without ever weighing down the whole. The wine maintains great energy throughout the tasting.
The 2023 vintage stands out for its balance and clarity, offering an accessible Savagnin while retaining true complexity. At the table, it pairs perfectly with river fish, poultry, or dishes with delicate flavors, but also proves very interesting when tasted on its own. Its long and saline finish prolongs the sensation of freshness and tension. Pressed Savagnin is an ideal cuvée to discover the grape variety in a non-oxidative, precise, and contemporary expression. It accurately illustrates the know-how of Domaine des Cavarodes. A great Jura wine, elegant and authentic.
