Domaine Grand Pinot Noir En Prêle 2023 comes from approximately 25-year-old Pinot Noir vines with small berries, a biotype known for its delicate expression. The grapes come from clay-limestone soils at about 350 meters altitude, in an environment that favors freshness and aromatic precision. The harvest is done by hand at the beginning of October, with rigorous sorting in the vineyard and then on the sorting table to keep only the best berries. After total destemming, the cuvée undergoes a 5-day cold maceration, then fermentation in stainless steel tanks with a pied de cuve. Extraction work remains measured, with regular pump-overs to support the material without hardening the tannins. The 14-month aging in 228-liter oak barrels aged 8 years brings a discreet patina without imposing marked oakiness. Unfined and lightly filtered, this red Côtes du Jura retains a pure, supple expression very faithful to Jura Pinot Noir.
