The Domaine Pierre-Yves Colin-Morey is located in Chassagne-Montrachet, in the heart of the Côte de Beaune in Burgundy, a region renowned for the precision of its great white wines. Created in 2005 by Pierre-Yves Colin after leaving the family estate Marc Colin, the domaine quickly established itself as one of the most sought-after producers in the region. The vineyard covers about thirteen hectares spread across several appellations of the Côte de Beaune, notably Chassagne-Montrachet and Saint-Aubin. The domaine's philosophy is based on attentive viticulture to the soils and minimally interventionist vinifications to preserve the purity of the fruit and the expression of the terroir. The grapes are generally pressed whole cluster and ferment naturally with indigenous yeasts, an approach that contributes to the aromatic precision of the wines. The Hautes-Côtes de Beaune "Au Bout du Monde" cuvée comes from a particularly high and cool site located above the Côte de Beaune, an area known for producing taut and bright white wines. This high-altitude terroir gives the wine a lively and mineral expression of Burgundian Chardonnay.
The "Au Bout du Monde" 2023 cuvée is made exclusively from Chardonnay coming from a parcel situated between about 400 and 450 meters altitude on a southwest-facing clay-limestone slope. This sector, considered one of the coolest in the region, favors a slow ripening of the grape while maintaining significant natural acidity. The vines, aged about twenty years or more, produce concentrated grapes that retain a beautiful tension. After delicate pressing, fermentation is carried out with indigenous yeasts to preserve the identity of the terroir. The wine is then aged for about fourteen months in large oak barrels, with a limited proportion of new wood, then rests a few additional months in tank before bottling. This precise vinification aims to accompany the wine's texture without masking the expression of the grape variety or the specific vineyard site. The result is an energetic Chardonnay that reflects the freshness and uniqueness of this high-altitude terroir.
On the palate, the 2023 "Au Bout du Monde" reveals an expressive nose dominated by aromas of green apple, lemon zest, and white flowers, accompanied by subtle notes of hazelnut and white-fleshed fruits. The mouth is lively and dynamic, driven by precise acidity that brings energy and freshness. The flavors evoke ripe lemon, white peach, and sometimes a slight almond touch that appears with aeration. The structure remains elegant and balanced, with a mineral framework that recalls the limestone origin of the terroir. The finish, long and salivating, is distinguished by a lemony tension and beautiful aromatic precision. This white Burgundy pairs particularly well with shellfish, scallop carpaccio, grilled fish, or poultry in a light sauce.
