Franck Balthazar - Cuvée Chaillot 2023
In Cornas, Franck Balthazar perpetuates the traditional aesthetic of the northern Rhône. Manual cultivation, measured yields, harvests at peak maturity. Vinification is gentle, without artifice, to deliver straight, deep Syrahs faithful to the granite hillsides of the Ardèche massif.
The 2023 Cuvée Chaillot comes from the famous Chaillot hillside on decomposed granite. A sunny vintage, but with cooler nights that maintain its tension. Predominantly whole bunches, indigenous yeasts, gentle maceration in concrete vats. Long aging in old foudres and demi-muids to polish the material without any oaky imprint. Bottling without fining or filtration, controlled sulfur. Limited production with a few magnums.
The nose opens with violet, blackberry, and blueberry, followed by black olive, black pepper, and a hint of smoke. The palate is slender and juicy, with a tight yet silky texture and a core of pulpy black fruit crossed by a granite-like freshness. The tannins are ripe and chalky, with salinity adding rhythm. The finish is long and straight, with graphite, morello cherry, cold spices, and a bloody note that is typical of Cornas.
At the table, pair this cuvée with matured prime rib, pink rack of lamb, peppered duck breast, confit beef cheek, or roast pigeon. It's superb with gardianne or stewed hare. Serve between 15 and 16°C in a large tulip glass. Decant for 1 to 2 hours if opened young. Ideal tasting window is now to fifteen years, depending on the cellar.
