Domaine GANEVAT - Les Varrons Old Vines - Magnum 2020
The 2020 Les Varrons Old Vines cuvée from Domaine Ganevat, offered here in Magnum format, is a major expression of Jura chardonnay worked under a veil. From old vines planted on a clay-limestone terroir, this cuvée is in the purest tradition of the great oxidative white wines of Jura. The Magnum format further enhances the depth and aging potential of this wine, promoting a slow and harmonious evolution. Les Varrons is a cuvée of patience, shaped by time and a deliberately minimalist approach. The 2020 vintage offers ripe, structured material perfectly suited to long aging. This wine reflects a radical and sincere vision of Jean-François Ganevat's work. It is aimed at lovers of great, racé and authentic veil wines.
The nose is intense and complex, marked by notes of fresh walnut, hazelnut, dried fruits, and ripe apple. Upon aeration, nuances of sweet spices, light curry, and a deep mineral framework appear, signature of the clay-limestone soil. On the palate, the attack is broad and structured, carried by dense and deeply textured material. The veil brings remarkable aromatic complexity while maintaining beautiful natural tension. The texture is broad and enveloping, without heaviness, supported by constant energy. The aromatic evolution is slow and progressive. The finish is long, saline, and intensely persistent.
Vinified according to the simplest rules, Les Varrons Old Vines 2020 benefited from a minimum of three years of aging, without topping up, allowing the natural development of the veil. This long aging confers stability, aromatic depth, and remarkable aging potential to the wine, further enhanced by the Magnum format. It is a gastronomic and contemplative wine, intended for great occasions and long cellar aging. This cuvée embodies the essence of the Ganevat style, between Jura tradition and absolute requirement. A great veil chardonnay, powerful, racé, and timeless.
