The Domaine Céline and Frédéric Gueguen is located in Préhy, in the heart of the Chablis vineyard in the Yonne department, north of Burgundy. Created in 2013 by Céline Gueguen and her husband Frédéric, the estate is based on a long family tradition linked to the Chablis vineyard. The vineyard has gradually developed to cover several dozen hectares spread over different appellations in the area, with a predominance of Chardonnay, the emblematic grape variety of this northern part of Burgundy. The plots benefit from soils rich in limestone and marine fossils, characteristic of the Chablis basin, which give the wines a marked mineral signature. The property is managed with a sustainable and HVE-certified approach, favoring the natural balance of the vine and a precise expression of the terroirs. This philosophy results in upright and expressive wines that highlight the natural freshness of Chardonnay. The Côtes Salines 2024 cuvée perfectly illustrates this identity by offering a fresh and mineral interpretation of white Burgundies from terroirs near Chablis.
The Bourgogne Blanc Côtes Salines 2024 is made exclusively from Chardonnay grapes coming from plots located around Préhy, on clay-limestone soils close to those characterizing the Chablis appellation. These limestone-rich soils promote the production of tight and precise wines, marked by a clear minerality and natural freshness. The grapes are harvested at maturity to preserve the balance between fruit and acidity. Vinification is carried out at low temperature in temperature-controlled stainless steel tanks to preserve the aromatic expression of the grape variety. Aging continues on fine lees for several months, adding texture relief while maintaining the purity of the fruit. A complete malolactic fermentation occurs during this phase to harmonize the wine's balance before bottling at the estate. This technical approach aims to produce a precise Chardonnay that favors tension and terroir readability.
On the palate, Côtes Salines 2024 presents a fresh and expressive nose dominated by aromas of lemon, green apple, and white-fleshed fruits, accompanied by delicate floral notes. The mouth is distinguished by a lively and dynamic texture, supported by a clear acidity that enhances the impression of freshness. The flavors evoke citrus fruits, pear, and sometimes a slight saline nuance that recalls the limestone origin of the vineyard. The balance rests on mineral tension and fruit purity, a typical signature of Chardonnays from northern Burgundy. The finish, straight and persistent, reveals a chalky and salivating sensation that prolongs the tasting.
