The Bourgogne Les Grands Chaillots 2022 cuvée is made exclusively from Pinot Noir, the king grape of Burgundy's great reds. The grapes come from several plots located in the communes of Nuits-Saint-Georges and Chambolle-Musigny, with old vines that naturally bring density and complexity. The clay-silty soils give the wine a supple structure, fruity matter, and a good aging potential. The part from Nuits-Saint-Georges brings more depth, firmness, and character, while the Chambolle origin refines the whole with a silkier and floral dimension. The harvest is done manually, with about 20% whole clusters contributing to freshness, aromatic relief, and tension in the wine. Fermentation lasts about three weeks, with a gentle extraction approach to preserve the Pinot Noir grain. The 15-month aging, with a measured proportion of new barrels, supports the texture without overpowering the fruit.
